This delicious recipe is a crowd favourite. Hearty, filling and delicious – it is the perfect comfort food after a tiring day.
Ingredients (serves 5):
- 5-6 beef short ribs (300-400g each)
- 1 tbsp salt
- 1 tbsp pepper
- 3 tbsp olive oil
- 3 medium onions chopped
- 2 potatoes chopped
- 2 tbsp tomato paste
- 2 cups dry red wine
- 2 cups beef stock
- 2 sprigs rosemary
- 3 sprigs thyme
Directions:
- Preheat oven to 150°C
- Season short ribs with salt and pepper
- Prepare an oven-proof pot and heat olive oil in high heat.
Brown all sides of the short ribs in 2 batched and then remove it from the pot. - Turning the heat to medium, add onions, potatoes and cook till onion is slightly translucent.
- Add tomato paste and stir around for 2 minutes.
- Add in rosemary, thyme, red wine, beef stock and stir them well.
- Add the short ribs back into the pot.
- Cover with lid and transfer to the oven for 3 hours. And serve!
Tips:
If you prefer a more saucey stew, you can put the pot back onto the stove and add more water. Adjust the taste accordingly and season with more salt and pepper.
