Meal prep can seem to be daunting for first timers. With this recipe, you can easily prepare your meals for the week. It is both healthy and thrifty.
Ingredients (5 meals):
- 5 eggs
- 5 pieces of salmon or 5 slices of chicken breast
- 5 tbsp soya sauce
- 1 tsp white vinegar
- 1 tbsp mirin
- 1 tsp corn starch
- 3 cups of frozen corn
- 2 broccoli
- 1.5 tbsp salt
- 1.5 tbsp pepper
- 2.5 cups of brown rice
Directions:
- Prepare 5 air tight microwaveable containers
- Place 5 eggs in a pot of water, once it reaches the boiling point cover it with the lid and turn off the heat. Leave it covered for at least 8 minutes. After 8 minutes, rinse it with cold water and peel the eggs. Then place one each in each container.
- Place the chicken or salmon in a zip lock bag. Add soya sauce, white vinegar, mirin and corn starch into the bag. Mix everything well.
- Place the protein in either air fryer or oven, laying everything neatly on a baking sheet at 180°C for 12 minutes, flipping at the 6 minutes mark. After its done, place a slice each in each container.
- Chop up broccoli into pieces, and add it to boiling water together with the frozen corn. After about 7 minutes, it is ready if a fork can easily pierce into it. If not, continue boiling.
- Remove from the pot of water and season it with some salt and pepper. Separate into equal portions for each container.
- Wash brown rice, and add 2.5 cups of water. Cook the rice according to your rice cooker. Once its cooked, separate into equal portions for each container.
- Slightly cover the lid for each container until its cooled down to room temperature. Then cover it tightly and place it into your freezer.
- Every morning, you can bring it to work and just leave it to thaw in the fridge or at room temperature, before placing in microwave to heat up and eat.
Tips:
